A typical Snack or Breakfast for me.

This is a high protein lean snack idea that uses the meal prep chicken I have discussed in an earlier post sliced cold with a cut apple cubed cheese and *smuckers natural peanut butter, as a dip for the apple. Pairs well with my morning coffee, tea or water. When placed in a meal prep container it is perfect as a snack or lunch while at work. Give it a try, you will love it.
Broccoli 101! This is my preparation for Broccoli. I like it al dente like my pasta. So I chop it and par boil it for about 2-3 minutes than it goes directly into an ice bath to stop the cooking process. I drain it thoroughly in a colander and then store it in the refrigerator for a nice addition to my healthy snacks or meals. I find this is the ideal way for me to enjoy this nutrient and fiber rich vegetable. Bon Appetite.

A little parfait...

Todays breakfast is a bit of a play off of a classic yogurt parfait or even an english trifle. It is a raisin bran muffin broken up with greek yogurt and fresh berries. It is filled with fiber, protein, antioxidants and fresh spring tastiness. This makes me long for summer but comforted knowing it is just around the corner.
